Cold Brew Meets Lavender: A Refreshing Twist on Coffee Cocktails
There’s something magical about the way coffee and lavender come together. The deep, complex notes of cold brew coffee meet the delicate floral sweetness of lavender syrup, and just when you think it couldn’t get any better—here comes the sparkle of tonic water and the smooth kick of vodka.
That’s the Lavender Cold Brew Spritz in a nutshell: a cocktail that’s equal parts refreshing, aromatic, and delightfully caffeinated. It’s a drink that feels like a lazy summer afternoon in full bloom, where the scent of lavender drifts through the air, and every sip is a little celebration.
But what makes this floral coffee cocktail truly irresistible?
If you’ve been around my coffee corner for a while, you know my love for lavender runs deep. I’ve already whipped up a dreamy Lavender Latte, a cozy Lavender Coffee, and the ultimate summer refresher, an Iced Lavender Latte.
But today, we’re stepping things up a notch. By adding cold brew to the mix, this Lavender Cold Brew Cocktail leans into the bold, smooth richness of coffee while keeping that signature floral elegance. And let’s be real—what’s better than a coffee cocktail that’s both sophisticated and easy to mix at home?
As a coffee brewing professional, I can’t help but geek out over combinations that highlight the versatility of coffee. And the Lavender Cold Brew Tonic? Oh, it’s a perfect example of how coffee isn’t just for morning routines—it’s for happy hour, too! The way the bitterness of cold brew plays against the crisp, slightly citrusy bite of tonic water? Absolutely genius. The way the lavender syrup rounds it all out with a touch of floral sweetness? Pure harmony.
So, if you’re ready to shake up your coffee game and impress your taste buds with something bright, bubbly, and beautifully balanced, grab your cold brew and cocktail glass. Let’s mix up a Lavender Cold Brew Spritz and toast to creativity in a cup!
Ingredients you need
- Vodka – Go classic with unflavored vodka or take it up a notch with my all-time favorite: vanilla vodka for a smooth, slightly sweet twist.
- Lavender syrup – Whether you make it from scratch or grab a bottle from the store, this floral syrup is the star of the show.
- Cold brew coffee – Homemade is always best (and totally worth it!), but if you’re short on time, a good store-bought cold brew will do the trick.
- For the best balance of flavors, use a medium or light roast cold brew, as darker roasts can overpower the floral notes.
- Tonic water – I’m a Fever-Tree fan through and through—its crisp, clean taste pairs beautifully with the lavender and coffee.
- Cubed ice
- Lemon slice – A fresh, zesty touch that beautifully complements the floral and coffee notes.
- For a slightly brighter flavor, add a small squeeze of fresh lemon juice before stirring.
- Stirring stick – A stylish and functional garnish that not only looks great in the glass but also helps everyone remember which drink is theirs.
- Fresh lavender (optional) – If you have it on hand, a sprig of fresh lavender makes the perfect aromatic garnish, adding even more floral depth to every sip.
Step-by-step
How To Make Lavender Cold Brew Cocktail From Scratch
Step 1: Fill a highball or gin and tonic glass with plenty of ice cubes—because a chilled cocktail is a happy cocktail.
Step 2: Pour in the vodka (vanilla vodka if you’re feeling extra fancy), lavender syrup (starting with ½ ounce and adjusting to taste), and cold brew coffee (preferably a medium or light roast for the best balance of flavors).
Step 3: Top it off with tonic water (one high ball glass holds 240 ml (1 cup) to 350 ml (1 ½ cups)), letting that crisp effervescence bring everything to life.
Step 4: Give it a gentle stir—just enough to mix the flavors while keeping that bubbly tonic intact. If you like a little extra brightness, squeeze in a touch of fresh lemon juice before stirring.
Step 5: Garnish with a fresh lemon slice for a citrusy pop and add a cute stirring stick —because not only does it look charming, but it also helps you keep track of your drink.
Step 6: If you have fresh lavender, gently rub the sprig between your fingers before garnishing to release its aroma, then place it in the glass for a beautiful floral finish.
Step 7: Take a sip, close your eyes, and enjoy the floral, fizzy, coffee-kissed perfection!

Lavender and coffee is such a great combo!
Putting the Provence into the coffee, aren’t you? This was a really summery and unusual take on a coffee cocktail, that had me close my eyes and feel myself walking through the lavender fields in France, brushing the flowers with my fingers and enjoying the scent.
I’ll admit I was sceptical lavender and coffee could work together but they do! Somehow the flavours balance each other out. Delicious and will make again.
The floral notes add such a refreshing twist. It’s a perfect balance of smooth and slightly sweet—definitely a new favorite!
I tried this lavender cold brew cocktail, and it’s a refreshing twist on the classic! The floral notes of lavender pair perfectly with the bold cold brew—so good!
