- Brown sugar syrup – homemade is best for that rich molasses flavor
- Cocoa powder – Criollo cocoa is the gold standard! It’s the rarest and highest quality variety, known for its smooth, complex flavor and low bitterness.
- Espresso powder or very fine ground espresso beans – optional, but it deepens the chocolatey coffee vibe
- Toppings – whipped cream, chocolate shavings, or whatever you’re craving
What is Criollo cocoa powder, and why should I use it?
Criollo cocoa powder is considered the highest quality cocoa in the world—and for good reason! It’s a rare heirloom variety known for its delicate, complex flavor and low bitterness. With subtle notes of caramel, nuts, and dried fruit, Criollo cocoa adds a beautiful depth to your mocha without overpowering it. If you want a truly luxurious, café-worthy experience at home, this is the cocoa to reach for.
Bonus: it’s also easier on the palate for those sensitive to darker, more acidic cocoa powders
How To Make a Brown Sugar Mocha From Scratch
Step 1: In a small saucepan over low heat, whisk together your milk, cocoa powder, and espresso powder until smooth and well combined.
Step 2: Stir in the brown sugar syrup and let it gently warm for about a minute, allowing all the flavors to blend beautifully.
Step 3: Brew your espresso or strong coffee and pour it into your favorite cozy mug.
Step 4: Gently add the warm chocolate milk mixture to your mug and give everything a good stir.
Step 5: Finish with a dollop of whipped cream, a sprinkle of chocolate shavings, and sip your way into mocha heaven!
Barista Tips
- Brew with filtered water
Using filtered water when brewing espresso or strong coffee makes a big difference. It keeps unwanted flavors from minerals or chlorine out of your cup, so your mocha tastes smooth, rich, and exactly how it should. - Go for barista-style plant-based milk
Love almond or oat milk? Be sure to grab the barista edition—it’s specially crafted to froth well, stay creamy, and blend beautifully into hot drinks without splitting. Your mocha will thank you. - No frother? No problem!

Variation: Make It a Spicy Mexican Mocha
Want a spicy twist? Add a little heat to your mocha magic! Just a pinch of cayenne pepper stirred into the cocoa mixture will give you that delicious kick—turning your brown sugar mocha into a cozy Mexican Mocha with depth, warmth, and just the right hint of fire. It’s bold, chocolatey comfort with a little flair!
Feeling adventurous? A dash of cinnamon or a touch of chili chocolate on top pairs beautifully too.
